- Who doesn’t love some chicken noodle soup. I can’t believe how easy it is to make noodles. Gluten free has its challenges but its not hard. Had my toddler help roll out the dough for the noodles. They were so plump and yum in the soup.β€
- I started with yummy chicken broth from scratch of course. Then I made the noodles. Simple gluten free flour with xthanium gum worked nicely. I’m sure a blend that you add the xthanium gum yourself would also be a success.
- Three cups flour, three eggs and water to make a ball. Wow! I was so intimidated before to make noodles. Never again!! This is too simple and delicious to not make again. π³π
- Broth was brought to a mild boil then added noodles, chicken and veggies of choice. I love please but my daughter can’t eat them so I waited and added at the end.

My poor baby why does your tummy hurt? Again and again and no answers my poor daughter struggles with yummy pain. No answer and beyond frustrated. I finally demand the doctor to send her to a G I specialist. Done with the bandaid answer!! Done!
Im so thankful I listened to my mommy instincts. Thats what they are for, right? Conclusion is allergic to fructose. What the pea? How do we handle this? I was on a mission to learn everythibg about this diagnose plus the diet they put her on. Fodmap!? Determended to make yummy, healthy meals she and our family could enjoy! Determened not to go broke doing so!
Its been a science experiment in my kitchen but I’m doing it from yummy beef/chicken broth that heals the gut to tasty gluten free cookies. Yummy! Life is hard when your sick. I’m Determended to make it easier for my little girl by learning to cook for her but its still healthy, delicious and edible. Ha!



Kielbasa and rice

Lets talk stock! I love it from scratch. I make my own in a pressure cooker and its such yummy goodness filled with nutrients and vitamins. I start with either a whole hen or thighs. ( learned this from my good friendπβ€)

Then I add water and pressure cook for a hour sometimes a hour and a half. Its so yummy my daughter begged me to make it so she can drank it. π score!
Okay, back to recipe.
I take rice usually 1-2 cups depending on the crew. I brown in pan with yummy real butter. Then add the chicken stock 1:2 ratio.
It started to boil so I add the kielbasa chunks in and cover until rice is fine.
Whoohoo make a veggie. Our favorite is either peas or broccoli or both.

Gluten/dairy free Mac n cheese
What?!!?
How does this even taste good? Yum! Is not a word I would have thought I would use to describe this dish at first. Its been a cooking journey trying to make foods my daughter can eat. No lactose! No gluten! No cream cheese! Okay, okay! What then?
Well ill tell you that its not as hard as it sounds. I make cheese sauce from scratch. You have to thicken the sauce! Tried to without. Oh no! Runny goop. π
I use a gluten free bend and it works great. You can also use corn startch or potatoes starch to thicken.
I start with yummy real butter. When melted add desired thicking agent. Blend and slowing add milk. I use lactose free 2%. Add until desired amount. Let thicken then turn to low and add cheese. It depends on the day. I have used cheddar(all types), mozzarella, parmesan even pepper jackπππ
I boil the gluten free noodles about 20 min. The box says 8-10 min but they are too hard so I boil longer π
Add the cheese and top with tomatoes

Tomato soup
Making soup is my favorite. I love soup. Its warm, full of creativity and goes great with so much.
I started with butter, onions and garlic. Smells delicious!π³
Then add in diced tomatoes and v8. Let it simmer for a hour and add spices. I did basil, salt and pepper. When it cooled I added whipping cream to taste yummy. The next time I made it I didnt use v8 I u see tomato past and water. These to ways tasted like heaven.


Attempting banana pancakes
How hard can it be? Banana and eggs then cook as pancakes! Seems easy enough. I added milk just a little lactose free but man just that little splash caused mush but hey banana bread here we come. π
